Ostropel is one of the most famous Romanian dishes. It is prepared from very few ingredients at a very reasonable price, with minimal effort and in a relatively short time. The recipe is ancient, of Turkish origin, but has been adapted by Romanian chefs according to local tastes and ingredients. It is prepared especially in Oltenia, where dishes rich in garlic predominate.

Traditional ostropel recipe – ingredients
- 750 gm chicken legs
- 1 medium onion
- 5-6 cloves of garlic
- 2-3 tablespoons of sunflower oil
- Salt and pepper to taste
- 200 ml chicken soup or water
- 400g canned tomatoes
- Few fresh tomatoes
- 1 bunch green parsley
- 1 tablespoon vinegar, optional
- green onion leaves for garnish
Chicken Tinsel – Preparation
Start by preparing the ingredients so that you have them on hand when preparing the otropil. Divide the chicken legs into two pieces. Put them in a bowl, sprinkle with salt and pepper, and mix well. Then cover and let them rest for 15-20 minutes for the spices to penetrate into the meat.
Peel, grate and chop the onion fine. Peel the zucchini, grate it and cut it into slices. Cut the fresh tomatoes into cubes or quarters, if they are smaller. As soon as all these components are ready, you can begin to prepare the ostropel.
How to prepare chicken ostrobel according to the traditional recipe
After the chicken legs have rested and combined with the flavors of salt and pepper, put a frying pan with oil on the stove top. Boil the oil and brown the chicken well. Turn the meat from side to side to get an even browning. Add chopped onions with two cloves of garlic and mix them between the pieces of meat. After the meat is cooked through, transfer it to another bowl and cover to keep warm.
