Fasting bean soup recipe
- 500gm dried beans
- 2 onions
- 1 carrot
- 2 peppers
- 6 small tomatoes (cherry tomatoes)
- 1 tablespoon tomato paste
- 1/2 small celery
- 50 ml oil
- fresh parsley
- Salt and pepper to taste
How to prepare:
Beans should be picked and soaked in the evening water. Boil 3 liters of cold water, and after 10 minutes after boiling replace it with another water, this is repeated twice.
Wash and clean the vegetables, cut them into cubes without tomatoes and separately in a saucepan, add the oil and let it heat up, then add the vegetables and leave for a few minutes until they are sorted.
Add tomato paste, bean soup and peeled tomatoes, about five tablespoons, then simmer for 12 minutes, after which add the beans on top of the vegetables.
Bring to a boil several times, then add salt and pepper to taste. Remove the mixture from the heat and add the chopped parsley. Bon appetite!
