Due to the fact that the whites and yolks of the eggs are whisked separately, baking powder is no longer needed for the recipe. Air accumulated with whipped egg whites is enough to get a fluffy layer. The recommended cream for this counter is coffee. It cooks quickly and has the consistency of a pudding.

This classic walnut countertop recipe can be used to make any cake. Cooking time is about an hour and you get a work surface with a diameter of about 24 cm. First, whisk 6 egg whites separately with a pinch of salt and 150 grams of sugar. Keep in mind that the result should be a fairly consistent, light-colored foam. After the sugar is dissolved, add 6 yolks. To check it’s melted, take a little bit of the composition between your fingers and rub it in. If you do not feel its crystals, it means that it has melted. After the mixture is homogenized, add 160 grams of ground walnuts, 75 grams of flour and 2 bags of vanilla sugar. Mix them with a spoon, stirring from the bottom up. It will not mix vigorously because the air in the egg white should not be lost. Since the worktop does not contain baking powder, it is the only growth factor.

The oven will be preheated to 180 degrees. The composition is poured into a mold with a diameter of 24 cm, previously greased with butter and lined with flour. You can also choose which tray to cover with baking paper. Adjust the level of the composition and leave in the oven for 30-35 minutes. The top should be baked until it sticks out from the edges on its own. When ready, it will be left to cool on the grill, after which it will be cut into 2-3 slices. Due to the fact that the work surface has a wet feel, syrup is no longer needed. It is ready to fill with any kind of cream you want.

Coffee cream for a delicious cake

For this cream you will need 250 ml of strong coffee. First, beat 6 egg yolks with a pinch of salt and 175 grams of sugar until foamy. Add 60 grams of starch and hot coffee on top of the resulting composition. Gently stir until smooth, then pour in half a liter of hot milk. The obtained composition is placed in a saucepan and brought to a boil, with constant stirring. In the end, the composition should be in harmony with the dessert. Leave to cool, covered with a thin layer of cling film. Then add 250 grams of softened butter, which should contain 82 percent fat.

The top of the walnut will be filled with the resulting cream and will be decorated as you like. Let it cool overnight, then it can be served. The top of the nut can also be filled with chocolate mascarpone cream or chocolate brownie cream.
