How to make chocolate cake
Start by separating the egg whites from the yolks in two bowls. Sprinkle a little salt over the egg whites and leave at room temperature.
Put the butter in the bowl of a stand mixer and leave it for 15 minutes at room temperature.
Melt the chocolate in a steam bath or in the microwave and let it cool slightly.
Before you start mixing the components of the worktop, turn on the oven at 180 ° C. Add the powdered sugar over the soft butter and turn on the mixer. Mix the butter well with the sugar until creamy. Add, in turn, the yolks, mixing the composition after each addition. Mix the chocolate you are pouring into a thin layer, stirring vigorously.
Mix the six egg whites with a pinch of salt until crystallized. Gradually add the icing sugar and keep mixing until you get a strong meringue. Add the meringue over the chocolate mixture and combine with a spoon. Mix the composition from bottom to top in circular motions.
Finally, pass the flour through a sieve over the surface of the Sacher cake. Gently incorporate it into the composition, using the same circular motions, from bottom to top.
Put baking paper at the base of the baking tray, grease the side walls with butter and sprinkle a little flour. Distribute the cake baking composition evenly. Put the figure in the oven and bake the face for 45-50 minutes.
Let the worktop cool in the baking dish for 5-6 minutes, then pour it over a cooling grill. Do not remove the baking paper until it has completely cooled.
How to prepare delicious zacher cake
Once the surface of the cake has completely cooled, cut it into three approximately equal parts.
Put the apricot jam in a bowl on the steam bath and let it heat until slightly soft. Add orange liqueur and pass the jam through a sieve until smooth.
Grease the surface of the first cake with half the amount of jam, then place the second part of the top on top of it. Spread the rest of the jam over it and add the last part of the work surface over it. Leave the cake assembled in this way to rest for 2-3 hours, then you can prepare the chocolate cream for decoration.
How to make chocolate cream
Put a saucepan on the low heat of the stove burner. Add sugar, water and grated chocolate. Let the ingredients dilute, stirring slowly, until you get a homogeneous mixture. Pour the chocolate mixture, over a low heat, over the cake and let it slide on the sides. In a cake pan, put the chocolate cream on the sides of the cake.
